I've added Babalu to the blogroll. I like that Val dude. Plus, he's cute. And he can cook a whole hog, a feat I consider to be the height of virile manliness. Yum!

The only time I remember a hole in the ground was after we shot the hog, we had a little trough that had to be heated to scaldin' temperature so you could rub the hair off the hog.
After that, we had an ol' fuel oil drum like they use for heatin that was "modified" to be like a big ass grill. Sumbitch had tires and a trailer hitch. Flat out Kick Ass. Cut the spine down the middle, lay him out flat, meat side down first. Keep the skin on so the juice would stay in. After a few hours, you'd have to turn him over. Dependin' on the size of the hog, cookin' times would vary but we usually started around 6:00 AM. Usually it involved some of the hair if the dog that bit ya, but pretty much went along the same lines of what Catfish said after that.
Barbecue sauce... that's a whole other deal. Eastern Carolina barbecue sauce is awesome.
